우선, 기본적으로, 처음 본 사람이고 서로 어떻게 불러야 할지 모를 때는 한국어에서는 통상 방향 명사를 사용하는 편입니다.
First, basically, when meeting someone for the first time and not knowing what to call each other, Koreans usually tend to use directional nouns.

그래서 “저기요, 실례합니다.”라고 하시고 하고 싶은 말씀을 하시면 됩니다.
So you can say “저기요 (over there), 실례합니다 (excuse me)” and say what you want to say.
드라마에서 “그쪽”이라는 말을 쓰는 걸 본 적이 있는데 이거는 좀 무례하게 들릴 수도 있으니까 조심을 하시면 좋을 것 같아요.
You might have seen the term “그쪽 (that side/you)” used in K-dramas, but this can sound a bit rude, so it would be good to be careful.
식당에 가서 뭐 시킬 때 친근하게 여성 분이면 “이모님”이나 “사장님”이라고 하시면 되고,

You can ask, “실례지만, 직급이 어떻게 되십니까? (Excuse me, what is your rank/position?).”
그리고 “직급”보다 조금 더 넓은 개념으로 “호칭”이라는 말이 있는데요,
And as a slightly broader concept than “직급”, there is the word “호칭 (title/form of address)”,
이거는 kinship term이나 별명까지 다 포함하는 말입니다.

그래서 “실례지만 호칭을 어떻게 할까요?”라고 하셔도 되고,

조금 더 공손하게 말씀을 하시고 싶으면 “성함이 어떻게 되세요?” 아니면 “성함이 어떻게 되십니까?”라고 하시면 됩니다.
If you want to speak even more politely, you can say “성함이 어떻게 되세요?” or “성함이 어떻게 되십니까?”.
